What's the problem with the third example?

I know everything about cars.
I know all about cars.
I know anything about cars.

The problem is that the third sentence is neither negative nor interrogative: anything is 'typically' used in questions and negative sentences.

Do you know anything about podcasting?

I don't know anything...

I know something...

"Anything" sometimes is called a negative polarity item, meaning that for it to occur in a particular position (here as the object), it must be preceded by negation, interrogative syntax or some other "semi-negation" (not a technical term, just a label for things that aren't inherently negative that can cause negation-like effects).

These illustrate all three:

He doesn't know anything.
Does he know anything?
I doubt he knows anything.

This is fun.

I know one thing about cars.

I know something about cars.

I do not know any one thing about cars = I do not know anything about cars.

If there is anything that he does not know about cars, I will be surprised.
If there is any one thing that he does not know about cars, I will be surprised.

If I know anything about cars, I know that this one doesn't work.

Anyone and everyone knows that anything is worth trying.

It can drive one (anyone in fact) barmy in the end.
